i like shaun of the dead and hot fuzz. unfortunately, the 3rd hasn't been made yet. maybe you could just watch spaced as the first of the series
also, the three colour trilogy by kryzsztof kieslowski is quite beautiful

but those plots have nothing to do with each other....can they still be considered part of a trilogy?
if so, then i add Waiting for Guffman, Best in Show, and A Mighty Wind......but I dont think that is appropriate.
