That is one of the greatest covers ever made. Trent Reznor said in an interview that he was so moved by it that he considers it Cash's song and not his.

Along those same lines I also love Cash's cover of Depeche Mode's "Personal Jesus."

There are so many songs to choose from. I enjoyed Weezer's cover of 'Velouria' by Pixies. I like the Pixies cover of 'Wild Honey Pie' by the Beatles, though the original is brilliant. (Well, of course it is, it's the Beatles.) And I also like Sonic Youth's cover of Nirvana's song 'mv'.
